You will gain knowledge and skills required to become a chef. At level 1 you will learn the basics of kitchen rules and regulations. You will cover Health and Safety in the Workplace and Food Safety. The techniques of cookery will be taught and assessed such as Boiling, Roasting and Braising. We work with local employers who will contribute to the knowledge and delivery of training. Employers may provide demonstrations and talks on the industry. You will be introduced to the opportunity to visit restaurants of all types from gastro pubs to top-quality establishments, where possible work placements may also be provided by the employers.

Evidence of a commitment to learn and the ability to study at this level shown at interview: including GCSE English and Mathematics at grade 2 or equivalent. A satisfactory reference will also be requested showing a minimum of 85% attendance.
Throughout your course, you will explore topics such as basic food prepation and cooking techniques, health and safety, food safety andhandling, use of kitchen equipment, preparing and cooking meat, fish and vegetables, baking, menu planing and how to work in a professional kitchen environment. The course will develop your practical cooking skills, food safety knowledge and understanding of the catering and hospitality industry.
Once you have achieved this qualification you should plan to progress through to level 2 to further your learning within the college. The type of roles that you can go into are commis chef, working in one of these establishment: Restaurants, Hotels, Hospitality events, Cruise liners and Private household events.
The Level 2 Culinary Skills course is assessed through a combination of practical assessments, coursework and written exams. These assessments focus on preparing dishes to professional standards, with an emphasis on presentation, timing, and quality. Additionally, you will complete written assignments and exams that cover food theory, health and safety, kitchen operations and menu planning.
