Course Overview

The catering and hospitality industry is diverse, providing meals and snacks for millions of people every day. Food business operators are increasingly aware of the requirement for a well trained professional workforce to ensure safe and timely delivery of food service operations.

This vocational qualification is the result of collaboration between City & Guilds, industry and education. It takes into account the latest approach to food safety, health and safety legislation and current industry practices.

The content of this qualification will ensure learners build the foundation skills to be developed within the workplace. Learners will be able to prepare and cook a range of commodities. Whilst the investigative and theoretical units provide a broad understanding of all aspects of kitchen operations, essential for those aspiring to work in the industry.

This programme is delivered by fully qualified and professional staff. You will benefit from a professional working environment which includes state of the art kitchens and the latest technology in cooking equipment.

Our restaurant, Chefs, is open to the public, providing real life work experience. Here you will prepare and serve lunch and dinner to paying guests and also cater for special events. We also provide civic hospitality for the Mayor of Croydon.

Trips and Activities:

You will have the opportunity to participate in trips organised to top quality restaurants and hotels; the objective being for you to experience first-hand the working environment and the benefits of employment within this sector.

Our students also have the chance to enter many exciting culinary competitions, including the Nestlé Professional Toque d’Or, Young Seafood Chef of the Year, Wessex Salon Culinaire, and the British Turkey Student Chef Awards!

The Diploma in Professional Cookery can help you find a job as a:

  • Catering or restaurant manager
  • Chef/Restaurant Manager

After taking the Level 1 qualification you could move on to:

  • Level 2 Professional Cookery

After taking the Level 2 qualification you could move on to:

  • Level 3 Professional Cookery
  • If you want to continue studying after completing the Level 3 qualification you might be interested in management qualifications

Assessment

The course is continuously assessed and is carried out using different methods to show the full range of your skills and knowledge. Assessment can be divided into practical tests of competence and written theory tests.

Entry Requirements

There are no formal entry requirements for learners undertaking this qualification.

Mature applicants may be considered on relevant experience without having the required entry requirements. However, an interview will always be required.

A satisfactory reference may also be requested.
